Delizie al Limone - Lemon Delights
So my lovely friend, Toria, challenged me to make something with one of her favourite liqueurs: limoncello.
Challenge duly accepted.
So I have made Delizie al limone which is a speciality of Sorrento but are sold all over the entire Campania region. They really do showcase the flavour of limoncello: with a lovely light sponge, lemon-flavoured custard and a dollop of cream. They are a real lemony treat.
As these are my first attempt at making these I am pretty pleased with how they turned out.
I made 6 of these beauties and gifted a few to Toria Otto and her mum - I hope they enjoy them!

• I put some lemon zest in the sponge batter.
• Filled the muffin tin holes only 3/4 full as the sponge will rise a bit.
• I let the pastry cream chill in the fridge.
• For the soak I used water instead of milk and let it boil then cool.
• I served mine on individual plates and piped cream around each one - see my photos.
