Fruits of the Forest Muffins

These 🧁Fruits of the Forest Muffins 🧁 are just a perfect way to start your day or as a treat anytime of the day.

I made these dairy free by using vegetable oil instead of butter & the texture was still light. Adding fresh berries to the mix adds a burst of fruit when you bite into them but when berries are out of season or unavailable you can substitute with frozen mixed berries (no need to thaw).

The key to making these muffins light & fluffy, is to not overmix & to put them straight in the oven because the baking powder & bicarbonate of soda have already started working so you must not delay.

They are so quick & easy to make, ready & baked within half an hour!!!

Fruits of the Forest Muffin recipe:

250g plain flour
3 tsp baking powder
1/2 tsp bicarbonate of soda
Pinch of salt
2 eggs (free range or organic)
100g caster sugar
1 tsp vanilla extract
75ml vegetable oil
125ml milk
1 overripe banana mashed (optional)
150g fresh or frozen mixed fruits/berries

Makes 6 large muffins or 12 smaller ones

1. Preheat the oven to 170C °C fan or equivalent. Line a 6 hole muffin tin with cases like me if you want to make larger muffins or use a 12-hole muffin tin instead for smaller muffins.

2. Sift the flour, baking powder, bicarbonate of soda & caster sugar with a big pinch of salt in a large bowl. In a separate bowl mix the oil, vanilla extract, eggs, mashed banana (if using) & milk.

3. Make a well in the centre of the dry ingredients and pour the wet ingredients including the fresh or frozen fruit. Roughly mix together with a spatula, being careful not to over-mix, then spoon the mixture into the muffin cases equally.

4. Bake for 20-25 mins, until golden brown. Decorate the muffins with fruit once they have cooled down if you wish.

5. They will keep for 2-3 days in an airtight container.
